Easy Egg Bake

Last week we had a big brunch at my church to kick off the women’s ministries for fall. This meant I had to get up “early” beforehand and make something, so I needed it to be simple. Fast. Mindless. Something I could fall back asleep while it was baking. You get the idea.

Easy Egg Bake
Serves  6-8

1 pound sausage (bacon or ham work too)
1 medium onion chopped
7 eggs
6 cups frozen hash browns
2 and 1/2 cups shredded cheddar cheese
Cooking spray

Preheat oven to 350 degrees. In a large skillet cook sausage and onion until meat is cooked all the way through.  Drain grease. In a large bowl, mix eggs, hash browns, and cheddar cheese. Add meat and onions to bowl and stir. Transfer egg bake mixture into a 9×13 and 8×8 dish.

Bake for 35-40 minutes, or until eggs are no longer runny. I definitely recommend spicing it up with something like hot sauce. This is a great foundational dish that you can remix and experiment with to give some more pizazz.
