Everyone’s Favorite Fries

Crispy-crunchy on the outside, soft and flakey on the inside – this is what every great fry must be. The husband eagerly finishes a whole plateful. Which in my life, is the real world version of a slam dunk/touchdown/homerun/ace/strike/some other sports victory analogy.

Everyone’s Favorite Fries
Serves 3-4

3 russet potatoes, sliced
8 cloves garlic, minced
1/4 cup olive oil
3 tablespoons corn flour
1/2 teaspoon garlic powder
1/4 teaspoon crushed red pepper flakes
Salt & pepper

Preheat oven to 450 degrees. Slice potatoes into strips, making about 12 fries per potato. Place potatoes in a large, microwave safe bowl. Set aside.

In a small skillet, heat garlic and olive oil over medium heat for about 1-2 minutes.

Pour garlic and oil over potatoes. Stir to mix throughout.

Cover bowl with plastic wrap and microwave for about 6 minutes, or until edges of potatoes are translucent. Stop halfway through microwave-time to stir. In a small bowl, combine corn flour, garlic powder, crushed red pepper flakes, and salt & pepper. Sprinkle onto potatoes and mix throughout. Remove potatoes from bowl and arrange on baking  sheet in a single layer.

Bake fries in oven 30 minutes, or until golden brown.

Try serving these up with Tilapia Burgers & Watermelon Salsa or some Ham & Apple Paninis.
