Healthy Crunch-tastic Onion Rings

I love a good onion ring. Crunchy with a hint of sweet. This recipe has even managed to get rid of the o-ring’s only fatal flaws. First, that thing where you take a bite and then the entire onion slips out leaving only a hollow ring of breading. And second, that they’re quite unhealthy. Both problems fixed. Are you enticed?

Healthy Crunch-tastic Onion Rings
Serves 2-4

2 vidalia onions
1 quart buttermilk
4 egg whites
1 cup medium ground cornmeal
1 cup panko bread crumbs
1/2 cup whole wheat flour
1 teaspoon salt
1 teaspoon pepper

Slice onions into half inch rings. Separate rings and soak in buttermilk overnight.

When ready to prepare, preheat oven to 450 degrees. Whisk egg whites together in a small bowl. In a separate bowl, combine cornmeal, panko, flour, salt, and pepper. Dip rings into egg and immediately coat in bread mixture.

Lay breaded rings onto a wire rack set atop a baking sheet. Spray with cooking spray and bake for 15 minutes. Remove from oven and flip.

Spray again with cooking spray and allow to bake for 10 more minutes.

  2. Oh wow!!!!!! I can’t wait to try these! Due to the drought we’ve been getting more onions in our CSA boxes. Will try on Saturday with a tomato pie!
