I am sitting here cackling, literally cackling as I eat these muffins. How are they so perfect?
Pink Strawberry Muffins
Makes 18 muffins
1 and 3/4 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
8 ounces strawberry cream cheese
1/2 cup unsalted butter, softened
1 cup sugar
1/4 cup milk
1/2 teaspoon vanilla extract
Preheat oven to 350 degrees. In a small bowl, mix flour, baking powder, baking soda, and salt and set aside. Using a hand mixer combine cream cheese, butter, sugar, vanilla, and eggs in a large bowl. Slowly add dry ingredients and milk while continuing to mix. Spoon batter into greased muffin tin filling each cup about half full.
Add a tablespoon of preserves on top of each muffin. Swirl preserves and batter using a sharp knife. Bake for 25-30 minutes and allow to cool before devouring.
