Feta, Cheddar, & Spinach Muffins
Makes 12 muffins
2 cups flour
2/3 cup cheddar cheese, shredded
2 teaspoons baking soda
1 cup feta cheese, crumbled
1 cup spinach
2 tablespoon butter
1 cup milk
2 teaspoons cayenne pepper
1/2 red onion, chopped
Preheat oven to 325 degrees. Place onion and butter into a saucepan on medium heat.
Cook until onions are tender. Combine flour and baking soda in large mixing bowl. Add cooked onions, cheddar, feta, egg, milk, and cayenne pepper.
Combine ingredients with wooden spoon to mix throughout. Slice spinach leaves into small bits and fold into mixture.
Using an ice cream or cookie dough scoop, divide batter into muffin tins.
Bake for 30 minutes.
