Any pancake mix
Peel and core apple and slice into thin, 1/8 inch rings.
Prepare pancake mix according to package instructions.
Dunk rings into batter and place on medium heat skillet. Cook for about 2-3 minutes on each side. I was surprised at how similar to regular pancakes these cook. Sprinkle raw batter side with cinnamon and sugar before flipping.
And they’re ready! It’s like the simplest homemade apple crisp.
