It’s healthy. It only uses one pan to make. It’s easy. And its really, really good. Dare I say it, favorite thing I’ve ever made?
Healthy Breakfast Stir Fry
2 cups frozen shredded hash browns
1 cup bell pepper, diced
1/2 cup onion, diced
1/4 cup real bacon bits
1 cup baby spinach
Olive oil cooking spray
Spray pan with olive oil cooking spray. Add 2 cups of frozen hash browns and let cook for 5 minutes on medium heat. Be forewarned that this recipe is not using any butter or oil so the potatoes will brown differently than some hash browns. Flip potatoes and cook for another 5 minutes. Add bacon and onions to mixture and continue to stir and brown.
After about 3-5 more minutes, add peppers.
Continue to combine mixture. Allow to cook for about 3-5 more minutes.
Add baby spinach and continually stir.
Once spinach is wilted, crack egg into pan and fold over ingredients.
After about 1 or 2 minutes, the egg will be cooked and the dish is ready to serve. I want to try variations with different meats or a spicy version with jalapenos.
