Coconut & Mango Steak Tacos

It’s Taco Friday!

Coconut & Mango Steak Tacos
Makes 6 tacos

6 tortillas
1 and 1/2 pounds flank steak
1 green onion, diced
Mango, diced 
Red pepper, diced
Salt and pepper
3/4 cup coconut milk
4 cloves garlic, minced
2 tablespoons olive oil

Sprinkle meat with salt and pepper. Marinade in coconut milk, garlic, cilantro, and olive oil overnight.

Preheat oven on high broil. Sear steak in a skillet  for 3 minutes on each side. Transfer to baking sheet and broil meat for 5 minutes. Rotate to alternate side and broil for another 5 minutes.

Dice mango, green onion, and red pepper.

Slice steak into thin strips. These cook times prepared the meat to medium well. Assemble with mango mixture and arugula and serve.

    I tried to contact you via email as not to post this so publicly and came up short. It’s no biggie really however if it were my blog I would want to correct it>>>>>
    This particular recipe has an error, you typed chicken in-stead of steak for the marinade step and when I clicked on the link for Caprese Pasta it took me to the Baked Avocado Fries? Like I said not a real BIG deal but a deal just the same.
    Keep up the great work..And bring on those recipes! :-)
