Feta & Bacon Stuffed Chicken Breasts
Makes 3 breasts
3 skinless, boneless chicken breasts
6 strips of bacon
Feta cheese crumbles
8 tablespoons olive oil
4 garlic cloves, diced
2 tablespoons oregano
Salt and pepper
Preheat oven to 350 degrees. Fry bacon and degrease with a paper towel. In a small bowl, combine olive oil, the juice of a lemon, garlic, oregano, salt, and pepper. Slice each breast horizontally 3/4 of the way through the meat. Stuff each breast with two strips of bacon and the feta cheese. Drizzle oil mixture over breasts in a 9×13 baking dish.
Bake for 35 minutes. I suggest serving with tabouli.
